Leftover Meatloaf Quiche Recipe

Leftover Meatloaf Quiche repurposes crumbled cooked meatloaf mixed with cheddar cheese and covered by a milk and Bisquick batter base enriched with eggs. Baked until set, it offers a savory quiche with a rich, tender texture featuring familiar meatloaf flavors in a new form, making good use of leftovers.

Description

This recipe starts by evenly spreading crumbled leftover meatloaf and diced cheddar in a greased pie plate. A smooth mixture of milk, Bisquick baking mix, eggs, salt, and pepper is poured over the filling before baking. The quiche bakes at 400°F until cooked through and a toothpick inserted comes out clean, resulting in a firm yet moist custard-like dish with savory bits of meatloaf and melted cheese throughout.

The combination of the Bisquick batter with meatloaf creates a convenient way to extend leftovers into a convenient brunch or dinner dish with a custardy texture and cheesy savoriness.

This dish can be served warm, sliced like a pie or quiche, and pairs with a fresh salad or vegetable side. The recipe adapts to different meatloaf types but note nutritional values will vary accordingly.

Ingredients

Servings
  • 2 cups meatloaf crumbled leftover cooked
  • 1 Cup cheddar cheese diced
  • 2 Cups milk
  • 1 Cup Bisquick
  • 4 egg
  • 1/2 Teaspoon salt
  • 1/8 Teaspoon black pepper ground

Instructions

  1. Preheat your oven to 400 °F.
  2. Lightly grease a deep dish 10-inch pie plate OR use a seasoned cast iron skillet.
  3. Sprinkle the crumbled meatloaf and cheese evenly over the bottom of the pie plate.
  4. Beat the eggs with the salt and pepper.
  5. In a medium bowl, pour in the milk and then add in the Bisquick and beat until smooth - it must be smooth to work! A whisk works great! Once smooth, add in the eggs and combine again.
  6. Pour the liquid mix over the ingredients in the pie plate.
  7. Bake in the preheated oven for 35 minutes or until a toothpick inserted into the center of the quiche comes out clean.
  8. Let cool on a wire rack for 15 minutes.
  9. Slice and serve!

Notes

  • Nutritional values vary depending on the meatloaf ingredients used; calculations here assume plain ground beef meatloaf.
