Leftover Turkey Nachos
Description
The Leftover Turkey Nachos recipe utilizes cooked, shredded turkey tossed with salsa layered with black beans and shredded Monterey jack cheese over corn tortilla chips. The dish is assembled in layers—half the chips topped with cheese, turkey, and beans—then repeated and finished with a final cheese layer. Baking at 400°F for about 10 minutes melts the cheese and warms the ingredients through.
This layered method results in nachos with melty cheese and evenly distributed turkey and beans, avoiding overly soggy chips. The black beans add a creamy texture contrasting the crisp chips, while salsa-coated turkey contributes moisture and tang. Jalapeño slices are optional for heat. Serving immediately while hot keeps the chips crisp on the edges and the layers moist.
This recipe can be customized by using leftover chicken or beef instead of turkey and can be prepared ahead and refrigerated until baking. Reheating leftovers is possible in the oven or on the stovetop at medium-high heat, helping make use of extra servings without sacrificing texture.
Whether assembled in a baking dish or skillet, this approach maximizes flavor layering and makes practical use of cooked poultry along with simple pantry staples.

- Shred and freeze leftover turkey mixed with salsa to prepare ahead for future nachos.
- This recipe works well with leftover chicken or beef as alternatives to turkey.
- Reheat leftovers in a 400°F oven for 10 minutes or on the stovetop over medium-high heat to restore warmth and texture.
