Leftover Turkey Noodle Soup

Leftover Turkey Noodle Soup simmers turkey carcass with vegetables to create a flavorful broth, then adds cooked turkey meat and egg noodles to make a hearty soup. The recipe uses simple seasonings and fresh parsley garnish, turning leftovers into a warming dish with tender noodles and savory broth. It's practical for extending holiday turkey and customizing with herbs or vegetables.

Description

Leftover Turkey Noodle Soup begins by simmering a turkey carcass with onion, celery, and carrots to extract a rich broth. This home-cooked stock forms the base for the soup, imparting deep turkey flavor. After straining, reserved turkey meat and egg noodles are added along with chopped cooked carrots and seasonings including salt, pepper, and bouillon for enhanced taste.

The noodles cook in the simmering broth, soaking up savory flavors while remaining tender but firm. The inclusion of fresh parsley garnish adds a bright note. The method utilizes leftover turkey meat to make a comforting soup that's substantial and nourishing without heaviness.

This soup suits serving as a wholesome warm meal and can be varied by adding herbs like dill or vegetables such as parsnips. It keeps fresh refrigerated for several days, and for freezing, it's recommended to store and reheat the broth and meat separately from noodles to maintain texture.

Ingredients

Servings

For the Broth

  • 1 turkey carcass leftover from a carved turkey, all meat removed
  • 14 cups water
  • 1 large onion peeled
  • 2 talks celery
  • 3 medium carrot peeled
  • ½ teaspoon salt or to taste
  • ¼ teaspoon black pepper or to taste

For the Soup

  • 2 to 3 cups turkey meat chopped, white or dark
  • 8 ounce egg noodles dry
  • 1 bouillon cube or 1-2 tbsp Vegeta
  • ¼ teaspoon salt or to taste
  • ¼ teaspoon black pepper or to taste
  • 1 tablespoon parsley chopped for garnish

Instructions

  1. In a large soup pot, add turkey carcass, water, onion, celery sticks and carrots. Season with salt and pepper. Cook for about 1.5 hours, covered over medium-low heat.
  2. Remove the carcass and everything else from the soup using tongs or a slotted spoon, set the carrots aside. All there should be left in the pot should be the broth. Add turkey meat and noodles to the pot. You might need to add a couple more cups of water as some of it may have evaporated. Chop the cooked carrots into half moons and add back to the pot. Season with salt and pepper and add the bouillon cube or vegeta.
  3. Cook for another 8 minutes until noodles are cooked. Garnish with parsley and serve.

Notes

  • This soup also works well with leftover chicken instead of turkey.
  • Make broth from carcass for richer flavor or use store-bought broth as shortcut.
  • Add fresh herbs like dill or vegetables such as diced parsnips for variation.
  • Store leftover soup in airtight container and refrigerate up to 3 days.
  • Freeze soup without noodles for best texture; add noodles freshly when reheating.
