Leftover Turkey samosas

These leftover turkey samosas stuffed with cheese and cranberry sauce is the ultimate leftover turkey recipe. Let's face it, anything wrapped in crisp pastry and fried until golden is a winner and these golden brown samosas are no different.

Ingredients

  • 4 cups turkey shredded, cooked
  • 3 cups cheese grated
  • 4 tbsp cranberry sauce
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tsp sage dried
  • 1 tsp salt
  • 1 tsp black pepper
  • 20 samosa wrappers
  • 3 tbsp flour
  • 2 tbsp water
  • neutral cooking oil for frying, generic cooking oil

Instructions

  1. Combine all the ingredients for the filling in a large bowl, taste and adjust seasoning if necessary.
  2. Lay the samosa pastry out in front of you, lengthwise.
  3. Add a spoonful of filling to the bottom of the pastry then make a few diagonal folds to encase the filling in the pastry.
  4. Mix the flour and water together and use a little of the paste to seal the edges.
  5. Heat neutral oil in a medium-sized pot over medium-high heat and once hot, add the samosas in batches.
  6. Cook for 4-5 minutes until golden brown on both sides.
  7. Remove from the oil with a slotted spoon and allow to drain on paper towel.
  8. Serve with dipping sauce of your choice.
