Leftover Turkey Soup Recipe

This soup transforms leftover turkey, mashed potatoes, and orzo or stuffing into a comforting, creamy broth-based soup. The sautéed onions, garlic, and poblano pepper add a mild spice and aromatic base. The mashed potatoes thicken the broth naturally, creating a hearty texture without cream. Adding the cooked turkey and orzo/stuffing at the end warms them through while preserving their texture. It's a practical way to repurpose leftovers into a warming midweek meal with balanced flavors and a smooth, satisfying mouthfeel.

Description

Leftover Turkey Soup Recipe uses a savory mix of butter-sautéed onions, garlic, and poblano pepper for flavor depth. Mashed potatoes blended into chicken broth serve as a natural thickener, yielding a creamy yet broth-forward soup base. The cooked turkey brings tender, protein-rich bites, while orzo or leftover orzo stuffing adds a soft pasta element. The soup simmers gently, melding the flavors and softening the vegetables. The result is a comforting dish that stretches leftovers thoughtfully without heavy cream or flour.

The mild heat of the poblano is balanced by the richness of butter and the earthy aromatics, making it a flavorful but not overpowering soup. The orzo contributes a familiar texture common in turkey soups and stuffing, making it feel homely and filling. This soup works well after big dinners to use remnants creatively, and its warmth and thickness suit chilly days.

Serve this soup as a first course or light main with crusty bread or a green salad for balance. It’s easy to adapt by swapping chicken broth for turkey stock or using leftover stuffing instead of plain orzo. Season with salt and black pepper to taste just before serving to keep flavors fresh and bright.
