Description
The Leg of Lamb is prepared by infusing it with aromatic flavors through a combination of fresh rosemary, black pepper, sea salt, and whole garlic cloves pressed into the meat. The dry rub is generously applied over all sides, enhancing the roast with herbal and savory notes.
The lamb is roasted uncovered in a baking dish at 350°F for about 90 minutes, with the last 20 minutes covered to prevent drying. Cooking to an internal temperature of 145°F allows the meat to stay juicy and tender while gaining a nicely browned exterior.
Once rested for 10 minutes after roasting, slicing reveals a flavorful roast ready to be served as a centerpiece for a meal. The rosemary and garlic blend offers an earthy, pungent complement to the naturally rich lamb.
Ingredients
- 6 lbs leg of lamb
- 2 tbsp rosemary chopped, fresh
- 3 tbsp sea salt
- 2 tbsp black pepper ground
- 4 garlic cloves
- 1 tbsp herbs garnish
Instructions
- In a small bowl, create a dry rub by combining salt, black pepper and chopped rosemary.
- Poke holes throughout the top of the leg of lamb and stuff them with whole garlic cloves.
- Generously rub all sides with spices.
- Place the leg of lamb on a baking dish.
- Bake at 350°F for 90 minutes. During the last 20 minutes, cover the lab with foil or a lid. Leg of lamb is fully cooked when the internal temperature reads 145°F. Let it rest for 10 minutes before slicing and serving.
