This recipe begins by optionally tenderizing thick, boneless pork chops for even cooking and texture. After seasoning with salt and pepper, the chops are lightly coated with flour, which browns during a brief pan fry for a crisp surface.

The pan sauce develops by gently cooking butter with minced garlic, and incorporating fresh lemon juice and thin lemon slices, which bring brightness and aroma to the rich, savory butter base. Salt and pepper seasoning adjusts the final flavor.

Lemon Butter Pork Chops go well with simple sides such as steamed vegetables, potatoes, or rice to complement the sauce's balance between rich butter and citrus freshness.

  • 4 pork chops at least 1 inch thick, boneless
  • 1 tablespoon olive oil
  • salt kosher salt
  • black pepper kosher salt
  • ½ cup all-purpose flour
  • 4 tablespoons butter unsalted
  • 2 garlic minced, cloves
  • 4 tablespoons lemon juice freshly squeezed
  • 1 lemon thinly sliced

Instructions

  1. Preheat the oven to 350 degrees F. If desired, tenderize the pork chops. My mom swears by this! I place the pork chops between two pieces of plastic wrap and gently pound them or roll them with a rolling pin a few times. You don’t want to make them too thin!
  2. Season the pork chops all over with salt and pepper.
  3. Heat a large skillet over medium heat. Add 1 tablespoon of olive oil to the pan.
  4. Take each pork chop and dredge it through the flour, making sure it’s completely covered but shaking off any excess. Place it in the pan and cook it for 2 to 3 minutes, until golden brown.
  5. Then flip and cook it for 2 minutes more. Transfer the pork to a plate or an oven-safe baking dish.
  6. Once the pork is out of the pan, keep the skillet over medium-low heat and add the butter. Add the garlic and cook for 30 seconds. Add the lemon slices and lemon juice. Cook for 2 to 3 minutes, flipping the lemons in the pan. Add a pinch of salt and pepper.
  7. Pour the lemon butter mixture over the pork in the baking dish. Or you can place the pork back in the skillet with the lemon butter.
  8. Bake for 8 to 10 minutes, or until the internal temperature of the pork reaches 150-155 degrees F. This will depend on the thickness of your pork shops! You don't want to overcook them. Remove the dish and sprinkle with fresh herbs. Serve immediately with your favorite side dishes.
  9. I served the above with roasted asparagus - asparagus tossed in olive oil, salt and pepper and roasted for 10 to 15 minutes.
