This Lemon Cauliflower Rice Salad with Yogurt Dressing recipe is a healthy, protein-packed, light, and yet satisfying salad. Serve it as a light lunch on its’ own, as a starter, or a low-carb side for a healthy dinner.

Ingredients
For the Lemon Cauliflower Rice:
- 1 cauliflower any size, small head, cut into florets
- 1/2 tablespoon olive oil
- 1 large garlic clove
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper
- 1 tablespoon lemon zest
- 1/2 lemon juiced
- 3 tablespoons fresh herbs a mix of parsley, basil and cilantro or your favorite, chopped
Salad ingredients:
- 1 1/2 cup grape black, seedless
- 1 1/2 cup salad greens
- 1 cup chickpeas
- 1 cup radish sliced
- 1 cup grape tomatoes
For the Yogurt Dressing:
- 1/2 cup Greek yogurt ( any fat concentration)
- 1 garlic small clove, minced
- 3 tablespoons fresh herbs a mix of oregano, parsley, cilantro and basil, minced
- 2 Tablespoons white balsamic vinegar (use any fruit vinegar if you prefer)
- salt pinch
- 1/2 tablespoon olive oil
- 1 Tablespoon water to thin out the dressing to your taste, more or less
Notes
- You can easily add your favorite fruits, legumes, cold chopped meats and veggies to this Cauliflower Rice Salad and top everything with the refreshing yogurt herb dressing!
- Double the recipe for lemon cauliflower rice so you can serve it warm as a low-carb side dish with a nice roast chicken or grilled fish.
