Lemon Couscous Recipe

This EASY Lemon Couscous recipe is bright and full of flavor. It makes the perfect side dish for nearly any main dish!

Ingredients

  • 1 3/4 cup chicken broth or vegetable broth, low sodium
  • 2 cups couscous small
  • 1/4 lemon juice
  • 1-2 teaspoon lemon zest
  • 1/4 teaspoon kosher salt coarse
  • 1 tablespoon extra virgin olive oil
  • 1-2 teaspoons Italian parsley chopped, fresh

Instructions

  1. In a medium saucepan, bring the chicken broth to a full boil.
  2. When boiling, reduce to low heat and stir in the couscous, lemon juice, lemon zest and salt. Continue to cook for 1 minute.
  3. Cover and remove from the heat. Allow to sit for 3 minutes.
  4. Add the olive oil and parsley and fluff with a fork.
