Lemon Cucumber Popsicles are refreshing, zingy and perfect for summer! They're like detox water in a frozen treat and are simple to make and delicious. Only 12 calories per popsicle!

Ingredients
- 1 cucumber skin on
- Juice of ½ a lemon
- 1 tablespoon lemon zest
- 1 cup (250ml) coconut water
- 1 tablespoon agave nectar honey or equivalent favourite sweetener

Instructions
- Add all ingredients to a high-speed blender and blitz until smooth. Pour into popsicle moulds and freeze until solid.
- Alternatively, puree the cucumber with a hand held emersion blender until smooth. Mix with the other ingredients until well combined. Pour into popsicle/ice lolly molds and freeze until solid.
