Lemon Curd Chia Parfaits

Lemon Curd Chia Parfaits layer homemade tangy lemon curd with creamy chia pudding made from almond milk, chia seeds, and vanilla extract. The lemon curd brings bright citrus flavor and sweetness while the pudding offers a soft, gelatinous texture. Toppings like sliced almonds, hemp hearts, and frozen blueberries add crunch and freshness, making this parfait a balanced, nutrient-rich snack or breakfast option.

Description

The lemon curd is prepared by combining fresh lemon zest with sugar, then creaming softened butter with the sugar mixture before beating in eggs and lemon juice. The mixture is gently cooked until thickened and then cooled and refrigerated, resulting in a smooth, tart spread with a dense texture.

The chia parfaits are made by whisking almond milk, chia seeds, and vanilla extract together, then refrigerating to allow the seeds to swell into a pudding-like consistency. This pudding forms a creamy base that contrasts with the sharp lemon curd when layered.

Assembled in glasses, the parfaits alternate lemon curd and chia pudding, topped with sliced almonds, hemp hearts, and frozen blueberries for added texture and color. This combination creates a layered dessert or snack that balances tartness, creaminess, and crunch in each spoonful.

Ingredients

Servings

lemon curd

  • 2 lemon zest freshly grated, plural
  • 3/4 cups sugar
  • 1/4 cup butter softened, unsalted
  • 2 egg large
  • 1/4 cup lemon juice freshly squeezed

chia parfaits

  • 1 1/2 cups almond milk or your milk of choice
  • 1/2 cup chia seeds
  • 1 teaspoon vanilla extract
  • almond sliced, for topping
  • hemp hearts for topping
  • blueberries frozen, for topping

Instructions

lemon curd

  1. Place the lemon zest and sugar in a food processor and pulse until the mixture is combined.
  2. Beat the butter until creamy in your electric mixer and then beat in the sugar until light and fluffy, about 2 to 3 minutes. Beat in the eggs one at a time until combined. Beat in the lemon juice - if it looks a little curdled, that's okay! Transfer the mixture to a saucepan and heat over low heat. Cook until thickened, stirring the whole time, about 10 minutes. Remove and let the mixture cool completely, then refrigerate it.
  3. This will make extra lemon curd, so keep it chilled in the fridge and use it on EVERYTHING.

chia parfaits

  1. To make the chia pudding, whisk together the milk, chia seeds and vanilla extract in a bowl until combined. Refrigerate it for 30 minutes, then whisk again. Refrigerate for another hour (or even overnight).
  2. To make the parfaits, add 1 to 2 tablespoons of lemon curd on the bottle of a glass. Add about 1/3 cup of the chia pudding on top of the lemon curd. Add another dollop of lemon curd. Then go in with your toppings! Almonds, hemp hearts, frozen berries - whatever you'd like. Honey too!
  3. Serve immediately.
