Lemon Dijon Vinaigrette
Description
The Lemon Dijon Vinaigrette recipe blends freshly squeezed lemon juice with Dijon mustard and sugar to initiate a flavorful base. Slowly whisking in extra virgin olive oil emulsifies the dressing, producing a slightly thick and evenly combined sauce. Seasoned with sea salt and ground black pepper, the vinaigrette offers a tangy and subtly sweet profile. Adjustments in oil or sugar can balance the sharpness of the lemon juice and any natural sweetness variations in the olive oil. This dressing is suitable for fresh salads, cooked vegetables, or light marinades.
Ingredients
- 1/4 cup lemon juice freshly squeezed
- 1/3 cup extra virgin olive oil
- 1 1/2 teaspoons Dijon mustard
- 1 1/2 teaspoons sugar
- salt sea salt
- black pepper in grinder
Instructions
- Place the lemon juice, mustard and sugar into a large mixing bowl.
- Using a large whisk, slowly pour in the olive oil as you whisk.
- Whisk until slightly thick and emulsified.
- Season to taste with sea salt and cracked black pepper.
- Depending on the sourness of your lemon juice and the sweetness of your olive oil you may wish to add more oil or more sugar.
