Lemon Dill Mustard Dressing
Description
This Lemon Dill Mustard Dressing is made by whisking together lemon juice, finely chopped fresh dill, Dijon mustard, lemon zest, salt, black pepper, and a small amount of sugar. Gradually incorporating extra virgin olive oil emulsifies the mixture into a well-blended dressing with a balanced acid and herb flavor.
The dressing provides a fresh, zesty note with the dill adding herbal complexity and the mustard contributing mild sharpness. It's versatile for leafy salads or grilled vegetables, offering a bright lift without overpowering other ingredients.
For best freshness and flavor, add the dill just before serving if preparing in advance, as recommended, to maintain the herb's vibrant taste.
Ingredients
- 1/3 cup extra virgin olive oil or use a neutral-tasting oil if you prefer
- 1/4 cup lemon juice from about 2 medium lemons, freshly squeezed
- 1 1/2 tablespoon dill finely chopped, fresh
- 1 teaspoon Dijon mustard
- 1 teaspoon lemon finely grated zest
- 3/4 teaspoon kosher salt
- 1/4 teaspoon black pepper freshly ground
- 1/4 teaspoon granulated sugar (paleo: use sweetener of choice, e.g. Swerve or stevia)
Instructions
- Place all ingredients except for the oil in a medium bowl and whisk to combine. Gradually drizzle in the oil while continually whisking until the mixture is emulsified. Add salt to taste. Keep refrigerated.
Notes
- To maintain the dressing’s freshness, add fresh dill just before serving if making ahead.
