Description

The salmon's skin is removed before slicing the flesh lengthwise into 1-inch thick strips, which are then coiled into compact pinwheels. Arranged in a microwave-safe dish and coated with cooking spray, the pinwheels are seasoned with fresh lemon juice, kosher salt, and cracked black pepper to enhance their fresh, mild flavor.

A pat of butter is placed atop each piece along with a thin lemon slice and a scattering of chopped fresh dill to infuse the fish during cooking. Covered with a vented lid, the salmon pinwheels are microwaved on medium heat for 5 minutes and then allowed to stand for 5 minutes, a method that cooks the fish gently while retaining moisture and flavor.

  • 2 lb salmon
  • 2 lemon plural
  • 4 tbsp butter
  • 2 tbsp dill fresh, chopped
  • salt
  • black pepper

Instructions

  1. With a sharp knife, slice the skin away from the flesh of the salmon and discard.
  2. Slice the salmon lengthwise into 1 inch thick strips. Coil the salmon strips into pinwheels and place in a microwave safe bowl that has been coated with cooking spray.
  3. Squeeze the juice from one lemon and pour over the four salmon pinwheels. Sprinkle each with kosher salt and fresh cracked black pepper.
  4. Top each salmon pinwheel with a tablespoon of butter, a slice of lemon and divide the chopped dill over each.
  5. Cover with a lid that vents and cook in microwave on medium heat for 5 minutes. Allow to continue to cook with lid on for another 5 minutes. This is termed standby cooking.
  6. Remove lid and serve, pouring butter, lemon, dill sauce over the salmon pinwheels and rice.
