Description
This recipe involves marinating chicken breasts in a mixture of fresh lemon juice, olive oil, minced garlic, salt, black pepper, and dried oregano. The marinating process lasts at least four hours and can be extended up to eighteen hours to allow the acidic lemon juice and seasonings to tenderize and flavor the chicken thoroughly.
The marinated chicken is then grilled over medium to medium-high heat until an internal temperature of 165°F is reached, ensuring juiciness and safe cooking. Alternative cooking methods include pan frying or broiling if a grill is unavailable. Ingredients
- lemon approximately 3 tablespoons, juice of 1
- 2 to 3 to 3 tablespoons olive oil
- 1 teaspoon garlic about 2 medium cloves, minced
- 1 teaspoon salt I use coarse, kosher salt
- ¼ teaspoon black pepper
- ½ teaspoon oregano dried
- 1 to 2 to 2 pounds chicken breast
Instructions
- Whisk together all the marinade ingredients.
- Place chicken in a ziploc bag or shallow dish and pour the marinade over chicken, tossing to coat the chicken evenly with the marinade. Refrigerate for at least 4 hours but up to 18 hours.
- Preheat grill to medium- or medium-high (I use about 375 degrees on my pellet grill) and cook for 3-4 minutes on each side until an instant read thermometer registers 165 degrees at the thickest part of the chicken. (The chicken can also be cooked in a skillet on the stove or broiled in the oven.)
Notes
- Use thin-cut chicken breasts or tenders for better flavor absorption and quicker cooking.
- If only thick breasts are on hand, slice them in half horizontally to create thinner cutlets before marinating.
