Lemon Garlic Grilled Shrimp
Description
This recipe begins by marinating large shrimp in a mixture of extra virgin olive oil, freshly squeezed lemon juice and zest, garlic, and warming spices such as paprika, cayenne pepper, and celery salt. The marinade brightens the shrimp while adding subtle heat and depth of flavor.
Threading the shrimp closely on soaked wooden skewers helps them retain moisture and cook evenly over the grill. The high direct heat quickly turns the shrimp pink and opaque, with slightly charred edges that add texture without drying the flesh.
Serving the grilled shrimp with a homemade cocktail sauce made from ketchup, horseradish, and chili powder adds a tangy, mildly spicy accompaniment. A sprinkle of fresh parsley and lemon wedges completes the dish with fresh herbaceous and citrus notes.
