Description
The Lemon-Garlic Marinade combines simple ingredients: olive oil, freshly squeezed lemon juice, crushed garlic cloves, finely chopped oregano, kosher salt, and black pepper. These elements mix into a vinaigrette-like sauce that enhances meat with acidity from lemon and herbal depth from oregano and garlic. Marination times vary depending on the protein, with chicken requiring a minimum of 20 minutes, shrimp up to 30 minutes, and red meats such as beef, lamb, and pork benefiting from overnight marination for maximum flavor absorption. Meat can be marinated directly in zip-lock bags and frozen to defrost, allowing the marinade to soak in during thawing. After marinating, the proteins can be baked, broiled, or grilled according to preference.
Ingredients
- 1/2 cup olive oil
- 1 lemon juiced
- 2 cloves garlic crushed, number missing
- 2 Tablespoons oregano finely chopped
- 1 Tablespoons kosher salt
- 1/2 teaspoon black pepper
Instructions
- Whisk it all together. Taste and adjust seasoning. It should be flavorful like salad dressing.
- Marinate chicken 20 minutes to several hours. Shrimp marinates for up to 1/2 hour. Beef, lamb and pork can be marinated overnight.
- Timesaving tip: pour marinade into a zip-lock bag with meat. Freeze. While meat defrosts overnight, it will also soak up the marinade and be ready to cook.
- Bake, broil or BBQ meat as desired.
