Lemon Garlic Spaghetti with Sundried Tomatoes
Description
This Lemon Garlic Spaghetti with Sundried Tomatoes starts with cooked spaghetti drained and mixed into olive oil warmed with gently cooked crushed garlic. The bright acidity of fresh lemon juice and a touch of salt and pepper balance the richness of the oil and garlic. Chopped sundried tomatoes bring a chewy texture and concentrated tomato flavor, while pine nuts add a subtle nuttiness and crunch.
The dish is finished with fresh parsley or preferred herbs and squeezed lime juice to enhance the citrus notes. Tossing the pasta in oil keeps it lightly coated and moist without drying out. The garlic imparts a mellow aroma as it cooks just a couple of minutes, not browned, to keep it fragrant but not bitter.
This pasta works well as a light main course or paired with grilled protein or a green salad. It is best served immediately for freshness but can be reheated gently in the microwave with a splash of water to maintain moisture. The ingredients create a harmonious mix of sharp citrus, garlic pungency, nutty crunch, and tender pasta.
Ingredients
- 8 oz spaghetti
- 4 sundried tomatoes chopped
- 2 tablespoons extra virgin olive oil or sundried tomato olive oil
- 2 teaspoons parsley chopped (or herb of your choice)
- 1 clove garlic crushed
- 2 tbsp lemon juice
- 1 tablespoon pine nuts
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 lime small, squeezed over the top
Instructions
- Prepare pasta as per instructions on the box in a large pot of salty water. Drain pasta.
- Heat olive oil and garlic in a large pan over medium-high heat, until garlic is cooked slightly for about 2 minutes, stirring constantly.
- Ensure all your ingredients are nearby.
- Toss the pasta in the olive oil to coat, then immediately add the salt, pepper and lemon juice.
- Toss the pasta until all ingredients are mixed and turn off heat (you don't want to dry out the pasta).
- Add the sundried tomatoes in the pan and the pine nuts and toss again.
- Add the parsley or herb of your choice on top and squeeze a small lime over the top to bring out even more flavours.
- Serve immediately, or if reheating, microwave with a little bit of water in the bowl.
