Ingredients

  • 1 1/2 cups orzo
  • 1/3 cup lemon juice
  • 1/4 cup olive oil
  • 1 teaspoon lemon zest
  • salt to taste
  • black pepper to taste
  • 1 cup cherry tomato halved
  • 1 cup cucumber diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup parsley chopped, fresh
  • 1/4 cup basil chopped, fresh
  • 1/2 cup feta cheese crumbled

Instructions

  1. Cook orzo in a large pot of boiling salted water until al dente, about 8 to 10 minutes. Drain and rinse under cold water to cool.
  2. In a large bowl, whisk together lemon juice, olive oil, lemon zest, salt, and black pepper.
  3. Add the cooled orzo, cherry tomatoes, cucumber, red onion, parsley, basil, and feta cheese to the bowl with the dressing. Toss to combine.
  4. Adjust seasoning with additional salt and pepper if needed. Chill in the refrigerator until ready to serve.
