Lemon Parmesan Kale Pasta

Ingredients

  • 2 tbsp olive oil
  • 200 g (7oz) kale
  • 3 garlic crushed, cloves
  • 1 tsp red pepper flakes or chilli flakes
  • 2 tsp lemon juice
  • ½ cup white wine
  • 2 tbsp butter
  • ½ cup Parmesan Cheese grated
  • salt to taste
  • black pepper to taste
  • 500 g (1lb) pasta

Instructions

  1. Slice the woody stem out of the kale then wash well and roughly chop. Dry with a clean tea towel or a salad spinner.
  2. In a large frying pan heat the olive oil then sauté the garlic and pepper flakes for 30 seconds. Add the kale and allow to cook until wilted.
  3. Add the white wine, lemon juice and butter to the pan and allow to simmer for a few minutes until the kale is cooked. Season to taste.
  4. Toss in the cooked pasta and a few tablespoons of the pasta cooking water.
  5. Add the Parmesan and continue tossing until the pasta is coated.
  6. Serve with a generous handful of grated Parmesan.
