Lemon Pepper Seasoning is a dry blend made by drying lemon zest and grinding it with black peppercorns. The process involves carefully removing just the lemon zest, drying it thoroughly in a low oven until crisp, then combining it with freshly ground whole black pepper. This results in a fragrant, tangy, and slightly spicy seasoning suitable for adding bright citrus flavor and heat to various dishes.

Description

The Lemon Pepper Seasoning starts with the zests of small lemons, carefully separated from the pith for purity of flavor. These zests are dried slowly at a low oven temperature until brittle, which concentrates the lemon aroma and preserves it for storage. Whole black peppercorns are ground together with the dried zest to create a finely textured spice mix combining citrus brightness and piquant heat.

This seasoning lends itself well to seasoning meats, vegetables, and seafood, adding a fresh burst of lemon flavor paired with the pungency of black pepper. The drying process ensures the zest can be stored and used over time without losing potency or becoming bitter.

  • lbs lemon about 7 small lemons, plural
  • 4 tbsp black peppercorns whole

Instructions

  1. Wash the rinds of the lemons, pat dry. Using a knife, remove the zest only and leave the pith.
  2. Place the pieces of lemon zest onto a baking sheet lined with a Silpat mat or parchment paper.
  3. Place in a preheated oven at the lowest temperature possible. My oven temperature was 170 degrees F.
  4. The lemon zest is ready when it 'snaps' into 2 pieces rather than bend. Approximately 3 hours.
  5. Once the lemon zest has cooled enough to comfortably handle, add it to the spice grinder along with the peppercorns and grind until smooth.
