Lemon Pepper Seasoning Recipe
Description
The Lemon Pepper Seasoning Recipe creates a flavorful mix of lemon zest, garlic, peppercorns, and optional salt. The process begins with peeling the zest off whole lemons carefully to avoid the bitter white pith, then chopping it finely to speed drying. Baking the zest and garlic at low heat evaporates moisture gently until completely dry, preserving the citrus oils and flavor. The dried ingredients are then coarsely ground with peppercorns, providing a textured blend rather than a fine powder.
The seasoning balances the fresh brightness of lemon with pungent pepper and a gentle garlic undertone. It can be used to flavor chicken, fish, vegetables, or as a finishing seasoning. Stored in a jar, it keeps its aroma and potency for up to a year.
The optional sea salt lets the cook tailor saltiness to taste or dietary needs. This mix offers a fresh alternative to store-bought seasoning and highlights homemade methods for intensifying citrus flavor without preservatives.
Ingredients
- 8-10 lemon see notes, plural
- 1 tablespoon garlic finely chopped
- 2 tablespoons peppercorns
- 1 tablespoon salt optional, sea salt
Instructions
- Preheat your oven to 200 degrees Fahrenheit. Peel the zest off of the lemons using a vegetable peeler. Make sure not to peel the white pith under the zest.
- Chop the lemon zest into small pieces - this helps it to dry faster in the oven.
- Line a baking sheet with parchment paper and spread the chopped lemon zest and minced garlic on top in a thin layer. Bake in the oven for 1 ½ hours, or until the zest and garlic are completely dry.
- Let the dried lemon zest cool for a few minutes then use the parchment paper to pour it into your blender or spice grinder. Add the peppercorns and blend until coarsely ground.
- Transfer the ground lemon zest and pepper to a bowl and mix in the salt, if using. Store your lemon pepper in a jar in your pantry for up to a year.
Notes
- This recipe requires about 1 ¼ cups of chopped lemon zest, which comes from 8-10 lemons depending on size.
- Use a vegetable peeler to avoid the white pith under the zest, as it can add bitterness.
- Dried lemon pepper seasoning can be stored in an airtight jar in your pantry for up to a year.
