Lemon Poppy Seed Dressing

This Lemon Poppy Seed Dressing combines extra virgin olive oil with fresh lemon juice, mustard, honey, and poppy seeds to create a tangy and mildly sweet dressing. It emulsifies into a smooth consistency, making it ideal for drizzling over salads or as a light sauce. The use of fresh lemon juice gives it a bright, fresh flavor, balanced by honey's sweetness and the slight crunch of poppy seeds.

Description

The Lemon Poppy Seed Dressing is a vinaigrette-style dressing made by blending extra virgin olive oil, freshly squeezed lemon juice, mustard, honey, and poppy seeds. The mustard and honey work together to emulsify the dressing and provide a balance between tartness and sweetness. The poppy seeds add a subtle texture and visual interest. Once combined, the dressing has a smooth, pourable texture that clings well to leafy greens or vegetables.

This dressing can be shaken together in a jar or blended with an immersion blender for a uniform emulsion. It stores well in the refrigerator for up to two weeks, making it convenient for small batch preparation. The bright lemon flavor and mild sweetness make it versatile for a variety of salads and light dishes.

The dressing can be varied by substituting other citrus juices such as lime, orange, or blood orange. Adding dairy like buttermilk or sour cream to the base creates a creamy version that adds richness while retaining the lemon poppy seed character.
