Lemon Poppy Seed Pancakes
Description
Lemon Poppy Seed Pancakes combine dry ingredients including flours, sugar, baking powder and soda, and salt with wet ingredients like buttermilk, Greek yogurt, lemon zest and juice, melted butter, egg, and vanilla extract. The wet mix is gently folded into the dry, preserving fluffiness and a tender pancake structure. Poppy seeds add small bursts of texture throughout. Cooking on a lightly greased griddle until golden creates a pancake with crisp edges and tender interior.
The lemon zest and fresh lemon juice bring a fresh citrus brightness balanced by the richness of Greek yogurt and melted butter. These pancakes serve as a flavorful breakfast option with natural tang and mild sweetness. Maple syrup is a suggested accompaniment, enhancing but not overpowering the vibrant lemon flavor.
