  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice fresh
  • 2 cups flour
  • ¼ cup sugar
  • 1 tablespoon baking powder
  • ½ teaspoon kosher salt coarse
  • 1 tablespoon poppy seeds
  • ½ cup butter cold, unsalted

Lemon Glaze

  • 1 cup powdered sugar
  • 2-3 tablespoons lemon juice fresh

Instructions

  1. Preheat the oven to 375℉. Line a large baking sheet with parchment paper. Set aside.
  2. Combine the buttermilk, lemon zest, and lemon juice to a large liquid measuring cup. Stir together and set aside.
  3. Whisk together the flour, sugar, baking powder, salt, and poppy seeds in a large mixing bowl.
  4. Grate the cold butter using the small side of a hand grater or box grater. Add it to the mixing bowl. Using your hands, combine until small pieces are formed.
  5. Add the buttermilk mixture and, using a large spoons or a pastry cutter, stir just until the dough comes together, being careful not to over mix.
  6. Turn the dough out onto a well-floured surface, dividing into two and then forming those into discs about 1-inch thick.
  7. Place on prepared baking sheet. Slice each disc into 6 triangle-shaped pieces (like a pie).
