Lemon salad dressing is an easy side dish and my favorite go-to, it comes together in minutes and is perfect for any salad. Pair this lemon vinaigrette with simple greens and some sliced onion for the easiest side dish ever!

Ingredients
- ¼ cup lemon juice freshly squeezed, about 2 lemons
- ½ cup olive oil good quality
- 8 cups mixed greens or any salad of your choice.
- salt and pepper to taste

Instructions
- Pour lemon juice into a bowl, gradually whisk in the olive oil until light yellow and creamy.
- Season with salt and pepper to taste.
- Pour ½ of the dressing over the salad and toss. Taste and add more if needed or serve the remaining dressing for guests to dress.
