Lemon Salmon Pasta

Lemon Salmon Pasta blends linguine with a creamy lemon sauce enriched with butter, heavy cream, and fresh lemon zest and juice. It includes sautéed onions and garlic, plus tender steamed asparagus and smoky salmon pieces, creating a bright, rich pasta dish. The sauce thickens gently before combining with the pasta for balanced creaminess and citrus tang. This dish is a refined pasta suitable for dinner or lunch.

Description

Lemon Salmon Pasta starts by cooking linguine al dente in salted water, then tossing it with olive oil to prevent sticking. A sauce is made by softening chopped onion and garlic in butter, then simmering with heavy cream and lemon zest until slightly thickened. Lemon juice is added off heat to preserve brightness. Asparagus tips are quickly steamed in water for color and crispness.

The linguine is mixed with the lemon cream sauce and tender asparagus, then combined with bite-sized pieces of smoked salmon. The dish offers creamy texture balanced by citrus notes and smoky fish. The onions and garlic provide a mild savory base without overpowering the lemon or salmon flavors.

This pasta is suitable for serving as a main course with simple sides like garlic bread. Careful cooking of pasta and steaming of asparagus maintain textural contrast. The recipe notes emphasize proper salting and al dente pasta cooking for best flavor and mouthfeel.

Ingredients

Servings
  • 1 lb linguine uncooked, or spaghetti
  • 3-4 TB olive oil
  • 1 large onion chopped
  • 7 cloves cloves chopped
  • 3 TB butter salted
  • ½ cup heavy cream
  • lemon zest of 1
  • lemon juice of 1
  • 2 cups asparagus 2-inch pieces, fresh tips
  • ½ lb smoked salmon sliced into bite size pieces
  • salt kosher salt; freshly ground; to taste
  • black pepper kosher salt; freshly ground; to taste

Instructions

  1. Bring a large pot of generously salted water to boil. Cook pasta according to package instructions for al dente; do not overcook.
  2. Drain pasta, but reserve 1 cup of the pasta water to set aside. Sprinkle with 3-4 TB olive oil to prevent sticking. Keep warm and set aside.
  3. While pasta is cooking: Place butter in a large heavy skillet and heat over medium high heat until warm.
  4. Add onion and stir 1 minute or until translucent. Add garlic and stir 1 minute until fragrant.
  5. Stir in heavy cream and lemon zest. Bring mixture to a simmer; stir occasionally and simmer 8-10 minutes or until slightly thickened. Add lemon juice and remove from heat. Cover to keep warm.
  6. Place asparagus tips in a shallow, microwavable dish. Add 1/4 cup water, cover, and microwave 1-2 minutes or just until asparagus turns a bright green color.
  7. In a large pot or serving dish, gently toss pasta with lemon sauce to combine well. Add desired amount of reserved pasta sauce to loosen as needed.
  8. Gently toss in the cooked asparagus and smoked salmon. Add salt and pepper to taste, as needed. Serve immediately.

Notes

  • Cook pasta in generously salted water to season it internally.
