Lemon Syrup
Description
The lemon syrup is prepared by combining granulated sugar, freshly squeezed lemon juice from unwaxed lemons, water, and chopped lemon peel in a pot. The mixture is brought to a boil and then simmered for about 10 minutes to extract the lemon flavor and dissolve the sugar fully. After simmering, it is strained to remove the peels and then cooled.
This results in a syrup with a balance of sweetness and citrus brightness. The syrup can be refrigerated in a sanitized container and kept fresh for up to two weeks. Its uses include sweetening beverages, drizzling over desserts, or incorporating into recipes where lemon flavor is desired.
Ingredients
- ¾ cup sugar 150g
- ½ cup lemon juice approx 2 lemons (120ml, fresh
- ½ cup water 120ml
- lemon unwaxed organic lemons, peels
Instructions
- Add the sugar, lemon juice and water to a pot, along with 1 of the lemon peels, chopped.
- Bring to a boil, then reduce the heat and simmer for 10 minutes.
- Remove from the heat and cool slightly.
- Place a sieve over a bowl and carefully pour in the syrup to strain. Discard the peels.
- Allow the mixture to cool and pour into a sanitized bottle or jar.
- Refrigerate for up to 2 weeks.
