Lemon Tahini Dressing (Oil-Free!)

The Lemon Tahini Dressing is an oil-free, creamy dressing featuring raw tahini, fresh lemon juice, garlic, and spices. Its texture thickens when chilled but can be thinned with water for drizzling. The combination of ingredients creates a tangy, savory dressing with a rich sesame flavor, suitable as both a dip and a salad dressing.

Description

This dressing mixes raw tahini with lemon juice, water, garlic, onion powder, salt, and freshly ground black pepper to create a smooth blend without oil. The fresh lemon juice brings brightness to the rich and nutty sesame taste of the tahini, while garlic and onion powder contribute depth. Because the dressing thickens in the refrigerator, additional water can be added when serving to achieve a pourable consistency that suits salads.

It serves well as a dip for vegetables or as a dressing on a variety of salads where an oil-free alternative is preferred. The balance of acidity, creaminess, and seasoning makes it versatile for many dishes.

Storing the dressing in the fridge for up to a week is convenient for make-ahead meals. The texture adjustment with water helps maintain ease of use after refrigeration.

Ingredients

Servings
  • 1/2 cup tahini raw
  • 1/4 cup water , plus more to thin
  • 6 tablespoons lemon juice about 4 lemons, fresh
  • 3 cloves garlic or 1/2 teaspoon garlic powder, minced
  • 1/2 teaspoon onion powder
  • 3/4 teaspoon salt sea salt
  • black pepper freshly ground

Instructions

  1. Combine all of the ingredients in a bowl or mason jar and whisk well to combine. Add extra water one tablespoon at a time, until the dressing is as thin as you'd like it to be, and adjust any seasonings to your taste.
  2. This dressing will thicken up when stored in the fridge. It's great as a dip, but if you want to thin it for a salad dressing, just add another tablespoon of water and stir until pourable again. This should last up to a week in the fridge.
