  • ¼ cup lemon juice
  • 2 cloves garlic minced finely or pressed
  • ½ teaspoon kosher salt more as needed
  • ¼ cup water more as needed, cold

Instructions

  1. Place tahini, lemon juice, garlic, and salt in a bowl. Whisk (as much as you can) until combined. It will be thick, and that is normal.
  2. Pour in the water and continue whisking until it is smooth. You can adjust the consistency by adding more (or less) water.
  3. Taste for seasoning and add more if necessary.
