Lentil Bolognese
Description
This Lentil Bolognese begins by gently cooking onion, celery, and carrot in olive oil until softened, which builds a flavorful vegetable base. Minced garlic is added briefly to enhance aroma. Tomato paste and sauce, along with canned diced Italian-style tomatoes, are stirred in with dried basil, oregano, and a small amount of baking soda to balance acidity. Red lentils and water are incorporated, and the mixture simmers until the lentils soften and thicken the sauce.
The sauce has a rich, hearty texture with the lentils providing body and protein without meat. The combination of vegetables and tomato creates a balanced flavor profile that is both robust and comforting, making it suitable for pairing with pasta or as a versatile sauce for other dishes.
Lentil Bolognese serves well as a vegetarian pasta sauce or a filling component for dishes like lasagna. The slow simmering ensures that the flavors meld together and the lentils contribute a satisfying texture that mimics the heartiness of a traditional Bolognese.
