Ingredients
- 1 tablespoon neutral cooking oil generic cooking oil
- 1 onion diced
- 2 cloves garlic minced
- 4 cups vegetable stock 950ml
- 4 cups romaine lettuce approx 1 ½ hearts, chopped
- 1 cup peas frozen, 160g
- 1 tablespoon lemon juice fresh
- ¼ teaspoon black pepper
Garnish, optional
- yogurt or sour cream
- mint chopped, fresh
- lemon zest
Instructions
- Add the oil to a soup pot, and heat over a medium heat. Add the onion and cook until soft, about 5 minutes. Stir in the garlic and cook for a further minute.
- Add the stock, lettuce and peas, bring to the boil then reduce the heat and simmer for 5 minutes.
- Stir in the lemon juice and pepper.
- Serve garnished with a little yogurt or sour cream, lemon zest, and chopped fresh mint.
Notes
- Store soup in an airtight container in the fridge for up to 3 days; reheat gently on stove or in microwave.
- Freezing is not recommended to preserve soup texture.
- Enhance flavor with chili flakes, air fryer croutons, or substitute toppings like Sriracha Aioli instead of yogurt.
