  • 1 tablespoon neutral cooking oil generic cooking oil
  • 1 onion diced
  • 2 cloves garlic minced
  • 4 cups vegetable stock 950ml
  • 4 cups romaine lettuce approx 1 ½ hearts, chopped
  • 1 cup peas frozen, 160g
  • 1 tablespoon lemon juice fresh
  • ¼ teaspoon black pepper

Garnish, optional

  • yogurt or sour cream
  • mint chopped, fresh
  • lemon zest

Instructions

  1. Add the oil to a soup pot, and heat over a medium heat. Add the onion and cook until soft, about 5 minutes. Stir in the garlic and cook for a further minute.
  2. Add the stock, lettuce and peas, bring to the boil then reduce the heat and simmer for 5 minutes.
  3. Stir in the lemon juice and pepper.
  4. Serve garnished with a little yogurt or sour cream, lemon zest, and chopped fresh mint.

Notes

  • Store soup in an airtight container in the fridge for up to 3 days; reheat gently on stove or in microwave.
  • Freezing is not recommended to preserve soup texture.
  • Enhance flavor with chili flakes, air fryer croutons, or substitute toppings like Sriracha Aioli instead of yogurt.
