Ingredients

  • 1 1/3 cup flour
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 cup oil
  • 2 eggs
  • 1/3 cup water
  • 1 cup canned pumpkin

Instructions

  1. Preheat oven to 350 degrees.
  2. In a medium bowl, combine the flour, sugar, baking soda, salt, cinnamon, and nutmeg.
  3. Add in the eggs, oil, and water.
  4. Once combined, fold in the pumpkin.
  5. Grease 4 mini loaf pans, or 1 large loaf pan and pour batter evenly into each.
  6. Bake in oven for about 30 minutes if using mini loaves, or about 55 minutes if using large pan.
  7. Remove from oven and enjoy!
