  • 1/2 tsp ground ginger pumpkin pie spice can be used in place of
  • 1/4 tsp cloves pumpkin pie spice can be used in place of, ground
  • pinch salt optional
  • 2 egg large
  • 1 oz can pumpkin not pumpkin pie mix, Libbys 100% Pure brand
  • 1 oz can evaporated milk Carnation brand
  • 1 pie shell 4 cup volume, unbaked, 9 inch deep dish
  • Whipped Cream for topping

Instructions

  1. Preheat oven to 425 degrees F.
  2. In a large bowl, beat eggs, then stir in pumpkin, spices, salt and sugar. Gradually stir in evaporated milk*. Pour into pie shell.
  3. Bake in preheated oven for 15 minutes, then reduce temperature to 350 degrees F. Bake for an additional 40-50 minutes, or until a knife inserted into the center comes out clean. Allow to cool on a wire rack for two hours, the refrigerate or serve. Store covered in refrigerator.

Notes

  • Reducing evaporated milk to about 90% of the can volume yields a thicker, firmer pie filling.
  • Allow the pie to cool for two hours on a wire rack before refrigerating or serving to help it set properly.
