  • 1 10-oz package frozen spinach 285 g
  • 1 14-oz can artichoke hearts 400 g
  • 1 8-oz package cream cheese can sub low-fat, 225 g
  • 1 cup plain greek yogurt 220 g
  • ½ cup grated parmesan 50 g
  • ½ cup shredded mozzarella 50 g
  • 3 cloves garlic minced
  • salt and pepper to taste
  • Optional for spice: 1 4-oz jar green chilies drained
  • Optional for broiling: ½ cup mozzarella

Instructions

  1. Prep: Thaw 1 10-oz package frozen spinach (in the microwave for 30 seconds), then press out as much moisture as possible. Drain and roughly chop 1 14-oz can artichoke hearts.
  2. Heat: Add spinach, artichoke, 1 8-oz package cream cheese, 1 cup plain Greek yogurt, ½ cup grated parmesan, ½ cup shredded mozzarella, and 3 cloves garlic to a large pot. For a spicier dip, optionally add drained green chiles. Taste and add salt and pepper, as needed to suit your taste. Heat over medium until cheese has melted, stirring often. Serve warm!
  3. Broil (optional): For a melty presentation, you can transfer the dip to a small casserole dish and top with ½ cup mozzarella cheese. Set your oven to "broil" and cook until cheese has melted, about 2 to 3 minutes (watch closely while oven is on broil, it will burn quickly).
  4. Serve: Warm with crackers, bread, chips, or fresh veggies!

Notes

  • Store in the fridge in an airtight container for 3 to 5 days.
  • To make this dip in a slow cooker, stir everything together and transfer to a slow cooker. Cook on low for 4-5 hours or high for 2-3 hours until melty and bubbly.
