Description
Lime Congealed Salad brings together lime-flavored gelatin blended smoothly with cream cheese and diluted with hot water for a creamy base. Once partially set, pineapple, chopped pecans, celery, and mini marshmallows are folded in to add crunchy, fruity, and sweet textures. The mixture is chilled until fully set, forming a firm but tender gelatin salad.
The resulting salad has a balance of tart lime flavor, creamy richness from cream cheese, and varied mouthfeel from the mix-ins. It is usually served cold, cut into squares, and can act as a sweet complement to savory meats or as a standalone dessert when topped with whipped cream.
Leftover lime salad should be stored refrigerated in an airtight container for up to three days to maintain freshness. Midway through setting, the marshmallows may require stirring to keep them submerged and prevent drying.
Ingredients
- .3 ounce lime gelatin mix
- 8 ounces cream cheese room temperature
- 2 cups water boiling
- 8 ounces pineapple drained, crushed, canned
- ½ cup pecans chopped
- ¼ cup celery finely chopped
- 1 ½ cups mini marshmallows
Instructions
- Using a stand or hand-held mixer, cream the jello together with the cream cheese.
- Reduce the mixer speed to the lowest possible and add the water a small amount at a time to begin with. After the mixture has loosened up and the water begins to incorporate easy, add the rest all at once.
- Continue mixing until the cream cheese, jello and water are thoroughly and smoothly combined.
- Pour into a mold or dish.
- Refrigerate until the mixture is partially set (about two hours, but check periodically).
- Remove from refrigerator and stir in the remaining ingredients.
- Return to refrigerator until completely set. Check after an hour to make sure the marshmallows are submerged. If not, stir them into the mixture again. The salad will need about 4 hours to completely set.
- Cut into squares to serve.

- Store leftovers in an airtight container in the refrigerator for up to three days to maintain texture and freshness.
- Stir the salad periodically during setting to ensure marshmallows remain submerged and soft.
