Description
Linguine Carbonara features fresh linguine cooked to al dente alongside peas. The dish starts by sautéing diced ham, minced garlic, and finely diced onion in olive oil until the onion turns translucent. White wine is added and reduced to concentrate the flavors. A mixture of egg yolks, whole eggs, and shredded parmesan is prepared separately. After cooking and draining the pasta while reserving some cooking water, the hot pasta is immediately tossed with the egg and cheese mixture and ham, using the reserved water to achieve a creamy consistency. Finally, chopped parsley and black pepper are stirring in for freshness and seasoning. The result is a creamy, hearty pasta with balanced flavors and a smooth texture without cream.
This recipe serves well as a main dish that blends protein, vegetables, and pasta. The balance of savory ham, sweet peas, and creamy egg-based sauce makes it versatile for a family dinner or casual gathering. It can be paired with a simple green salad or crusty bread to complete the meal.
Ingredients
- 1 pound linguine fresh
- 1 tablespoon olive oil
- ¼ cup onion finely diced
- 1 clove garlic minced
- 2 cups ham diced
- ½ cup white wine dry
- 1 cup peas frozen
- 1 cup Parmesan Cheese shredded
- 3 egg yolk
- 1 egg
- 1 tablespoon parsley chopped, fresh
- black pepper to taste
Instructions
- Heat olive oil and cook ham, garlic and onions over medium heat until onion is translucent. Add wine and let reduce until almost evaporated.
- Stir together egg yolks, eggs and parmesan cheese. Set aside.
- Cook pasta & peas together in a large pot of salted water just until pasta is al dente. Drain pasta ensuring that you reserve 1 ½ cups of the cooking liquid.
- Immediately toss pasta with the egg mixture and ham (you must do this right away to ensure the hot pasta cooks the egg). Add reserved cooking liquid a little at a time to get desired consistency (I usually use about ¾ cup). Stir in parsley and serve.
