Lion House Cinnamon Rolls

Lion House Cinnamon Rolls are a rich, yeast-raised dough recipe featuring a generous filling of cinnamon and sugar, topped with a creamy buttercream frosting. These rolls have a tender, slightly sticky dough that rises twice for soft, fluffy layers. The melted butter brushed before adding cinnamon sugar helps create sweetness and a tender crumb. After baking, the rolls are finished with a smooth, sweet buttercream that complements the warm cinnamon notes. This recipe yields about 18 rolls, ideal for breakfast or special occasions.

Description

The Lion House Cinnamon Rolls combine a yeast dough enriched with eggs, vegetable oil, and dry milk powder to create a soft and sticky dough. This dough is rolled out, brushed with melted butter, then covered with a cinnamon and sugar mixture before being rolled tightly and sliced into individual rolls. Allowing the dough to rise twice ensures a tender crumb and fluffy texture. Baking at 350 degrees produces golden brown rolls with soft, delicious layers inside.

The buttercream frosting, made from powdered sugar, softened butter, cream, and vanilla, adds sweetness and a creamy finish once the rolls have cooled slightly. An alternative cream cheese frosting option can be prepared by mixing cream cheese with butter, vanilla, and powdered sugar to a desired consistency for a tangier glaze.

These rolls can be served warm for breakfast or brunch, working well alongside coffee or tea. They offer a classic flavor profile combining cinnamon and buttery sweetness that balances richness with spice.

For best results, allow the dough sufficient rising time to develop texture and flavor. The recipe makes approximately 18 rolls, so it can accommodate a moderately large gathering. Using the cream cheese frosting alternative is straightforward and may provide a slightly different flavor profile based on preference.

Ingredients

Servings
  • 2 1/2 cups water warm
  • 1/2 cup vegetable oil
  • 3 egg
  • 1 teaspoon vanilla
  • 1/2 cup nonfat dry milk
  • 1 Tablespoon active dry yeast
  • 1 cup granulated sugar
  • 1 teaspoon salt
  • 7 cups all-purpose flour
  • 1/2 cup sugar
  • 2 teaspoons cinnamon
  • 1/2 cup butter melted

Buttercream Frosting

  • 3 cups powdered sugar
  • 1/2 cup butter softened
  • 6 Tablespoons cream (evaporated milk works too)
  • 1 teaspoon vanilla

Instructions

Cinnamon Rolls:

  1. Place water, oil, eggs, vanilla, and dry milk powder in the large bowl of an electric stand mixer and stir vigorously until milk is dissolved.
  2. Sprinkle yeast over liquid mixture then add the 1 cup sugar, salt, and flour.
  3. Put dough hook on mixer and mix for 10-15 minutes at low speed. The dough will be very sticky.
  4. Cover bowl with plastic wrap and let rise until doubled in size, about 1 1/2 hours.
  5. Turn dough onto floured surface and roll out into a rectangle shape.
  6. Brush with melted butter.
  7. Sprinkle with sugar and cinnamon.
  8. Roll up rectangle lengthwise and cut into one-inch slices.
  9. Grease a cookie sheet or line with parchment paper.
  10. Place rolls on cookie sheet, cover with plastic wrap, and allow to rise until doubled in size, 1 to 1 1/2 hours.
  11. Bake at 350 degrees for 12 to 14 minutes.
  12. After baking, let cool slightly before frosting. Frost with Buttercream Frosting.
  13. Makes about 18 rolls.

Buttercream Frosting:

  1. In a large bowl, blend powdered sugar, butter, and 3 Tablespoons of the cream with an electric mixer on low speed until combined well.
  2. Slowly add the rest of the cream, 1 Tablespoon at a time until creamy and smooth, but not runny. Add vanilla and mix again.

Notes

  • You can substitute the buttercream frosting with a cream cheese frosting by blending cream cheese, butter, vanilla, and powdered sugar to your preferred consistency.
  • The dough is sticky after mixing; proper flouring of the surface when rolling is important to prevent sticking.
  • Allow the rolls to rise until doubled in size both before and after shaping to ensure a soft texture.
  • This recipe yields about 18 rolls, suitable for serving a family or small group.
