  • 300 g little gem lettuce cut in half lengthways
  • 0.5 tablespoon olive oil
  • 1 pinch sea salt
  • 1 pinch black pepper
  • 1 red onion thinly sliced
  • 6 cherry tomato halved
  • 1 avocado cut into wedges
  • 3 radish thinly sliced
  • 30 g feta cheese crumbled
  • 8 tablespoon lemon vinaigrette
  • 1 tablespoon pine nuts (optional)

Instructions

  1. Lightly brush the cut sides of 300 g Little gem lettuce with 0.5 tablespoon Olive oil and season 1 pinch Sea salt and ground black pepper. Put cut side down on to a hot griddle pan and cook for 2 minutes. Depending on the size of your pan, this might need to be done in batches.
  2. Add 1 Red onion, 6 Cherry tomatoes, 3 Radishes and 1 Avocado.
  3. Pour over 8 tablespoon Lemon vinaigrette and use your hands to mix everything, making sure everything is coated with the dressing. Finish with 30 g Feta (crumbled) and 1 tablespoon Pine nuts.
