Liver Pâté Recipe

This liver pâté recipe blends braunschweiger with cream cheese and a classic seasoning mix of Worcestershire, dry mustard, and cayenne for a smooth, flavorful spread. It’s processed into a creamy texture using a food processor and optionally garnished with black pepper, fresh dill, and olive oil. Perfect for serving on rye, crackers, or Swedish flatbread, the pâté can be refrigerated for up to five days.

Description

The Liver Pâté combines 8 ounces of braunschweiger with softened cream cheese and a simple spice blend including Worcestershire sauce, dry mustard powder, and cayenne pepper. The cayenne adds subtle flavor without heat. Processing these ingredients together achieves a smooth and creamy consistency suitable for spreading. Black pepper, dill, and olive oil garnishes add optional layers of aroma and richness.

The pâté’s texture is velvety, making it an easy-to-spread appetizer or snack topping. Using braunschweiger provides a mild liver flavor balanced by the cream cheese, while the Worcestershire sauce and spices add complexity without overpowering.

Serve this pâté chilled alongside rye bread, crackers, or Swedish flatbread, allowing the flavors to complement the mild meatiness and creaminess. It works well as a savory spread for lunch or entertaining.

Store the pâté covered in the refrigerator and consume within five days to maintain freshness and texture. The recipe can be scaled by adjusting ingredient amounts while maintaining proportions for consistent flavor and smoothness.

Ingredients

Servings
  • 8 ounces braunschweiger
  • 3 ounces cream cheese softened
  • 1 tablespoon Worcestershire sauce
  • 1/4 teaspoon mustard powder dry
  • 1/8 teaspoon cayenne pepper
  • black pepper optional
  • dill optional, fresh
  • olive oil optional

Instructions

  1. Slice the Brunsweiger in half, if you have 1 pound. Add it to the food processor.
  2. Add 3 ounces of cream cheese. This is a little less than half of an 8 ounce block.
  3. Add 1 tablespoon Worcestershire, 1/4 teaspoon dry mustard, and 1/8 teaspoon cayenne pepper. The cayenne adds flavor, not heat.
  4. Blend well, scrape the sides, and blend a second time.
  5. Scrape into a serving bowl. Garnish with black pepper, fresh dill, and a drizzle of olive oil if you want to be real fancy. Serve with Rye bread, crackers, or Swedish flatbread.
  6. Store covered in the fridge for up to 5 days.
