Lo Mein

Lo Mein is such a delicious and easy healthy meal! This Asian noodle dish is loaded with veggies and you can have it on the table in less than 15 minutes!

Ingredients

For the Stir Fry:

  • 9 ounces ramen noodles
  • 1 tablespoon olive oil
  • ½ cup carrot julienne cut
  • ½ cup mushrooms sliced
  • ½ cup snow peas
  • ½ red bell pepper julienne cut
  • 2 cloves garlic minced
  • 1 teaspoon ginger grated, fresh
  • 2 green onions chopped

For the Sauce:

  • 3 tablespoons soy sauce
  • 1 ½ teaspoon sesame oil
  • 1 ½ teaspoon brown sugar
  • ½ teaspoon sriracha optional, more to taste

Instructions

  1. Mix sauce ingredients together and set aside.
  2. Boil water and cook noodles according to package. Drain.
  3. Meanwhile, heat olive oil in a large non-stick skillet over medium high heat. Add the mushrooms, bell peppers, and carrots and cook for 3-4 minutes. Add the snow peas, garlic, and ginger and cook for 1 more minute.
  4. Add the noodles to the pan of veggies, pour the sauce on top, and toss it all together. Remove from the heat. Sprinkle with green onions and serve.
