Loaded Breakfast Potato Skins

Seasoned crispy potato skins get loaded with potatoes, eggs, bacon and cheese.  Topped with all of your favorite toppings, these will become a family favorite!

Ingredients

  • 4 russet potatoes large
  • 5 egg
  • 1 tablespoon milk
  • 8 lices Bacon cooked and chopped
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ¼ teaspoon black pepper
  • ½ teaspoon salt
  • 2 tablespoons olive oil
  • ½ cup cheddar cheese shredded
  • green onion optional topping
  • salsa optional topping
  • sour cream optional topping

Instructions

  1. Preheat oven to 375 degrees Fahrenheit. Wash and scrub the 4 large russet potatoes and prick them all over with a fork. Wrap in foil and bake for 1 hour.
  2. Whisk 5 eggs and 1 tablespoon Milk together then scramble them in a skillet over medium-high until no longer runny. Place them in a medium-sized mixing bowl. Add the 8 slices cooked and chopped bacon to the eggs.
  3. Once the potatoes are baked and slightly cooled cut them in half lengthwise. Scoop out the insides leaving about ¼ inch of layer around the skin. Put the potato insides in the bowl with the eggs and bacon. Increase the oven temperature to 475 degrees Fahrenheit
  4. In a small bowl mix together ½ teaspoon garlic powder, ½ teaspoon paprika, ¼ teaspoon pepper, and ½ teaspoon salt. Lay the potato skins on a greased baking sheet, skin side up, and brush with 2 tablespoons Olive oil. Sprinkle about half of the spices on top of the potato skins, and bake for about 8 minutes. Remove from oven.
  5. Sprinkle the remaining spices with the eggs, potato, and bacon. Fill the insides of each potato skin with the eggs, potato, and bacon, and top with ½ cup shredded cheddar cheese. Put them back into the oven for about 2 minutes or until the cheese has melted. Top with the green onions, salsa, and sour cream,
