Description
The recipe begins with cauliflower florets steamed in the microwave briefly to a tender-crisp stage. In a mixing bowl, softened cream cheese, sour cream, butter, half the shredded cheddar, and chopped green onions are combined to create a creamy base. The steamed cauliflower and half of the cooked diced bacon are folded into this mixture to coat the florets evenly.
This creamy cauliflower is then transferred to a baking dish, topped with the remaining cheddar and bacon, and baked uncovered at 350°F until the cheese melts and turns bubbly. The result is a rich, cheesy casserole where the cauliflower remains tender and accented by the smoky crunch of bacon.

Ingredients
- 1 pound cauliflower florets
- 1 cup cheddar cheese divided, grated
- 4 ounces cream cheese softened
- 1/4 cup sour cream
- 2 tablespoons butter soft
- 1/4 cup green onions chopped
- 10 lices Bacon cooked and diced, divided
Instructions
- Preheat oven to 350 degrees. Spray an 8x8 baking dish with non-stick spray.
- Add the cauliflower to a microwave safe bowl, add 2 tablespoons of water to the bowl, cover with plastic wrap, and microwave for 3 minutes or until tender crisp.
- In a large bowl, stir together 1/2 cup of the cheddar, cream cheese, sour cream, butter, and green onions until well combined.
- Stir in the cauliflower to coat. Stir in half of the bacon.
- Pour cauliflower mixture into prepared baking dish and sprinkle with the remaining cheddar and bacon.
- Bake, uncovered, for 15 minutes or until cheese has melted and cauliflower is as soft as you'd like.
- Serve immediately.
Notes
- Fresh cauliflower is preferred for better taste and texture, but frozen cauliflower can be a substitute.
- To reduce fat content, decrease the amount of sour cream and omit butter; dish remains flavorful due to cheese.
