Loaded Cheesy Potato Casserole
Description
This Loaded Cheesy Potato Casserole starts with boiling russet potatoes until tender, then mashing them with cream cheese, sour cream, milk, parsley, garlic powder, salt, and pepper for a creamy, flavorful base. The mixture is spread in a baking dish, topped with shredded cheddar cheese and crispy bacon crumbles.
Covered and baked at 350°F, the casserole gently bubbles and melds flavors, with a final uncovered baking step to ensure the cheese melts and forms a slightly browned topping. The potatoes maintain a smooth, rich texture under the savory, cheesy crust.
It makes a hearty side dish suitable for family meals and holiday gatherings, pairing well with meats or served as a standalone comfort option.
The recipe is adapted from The Girl Who Ate Everything and yields enough for about 5 to 6 medium potatoes worth.
