  • 250 g tortilla chips
  • 2 portion salsa
  • 2 portion chicken for slow cooker fajitas
  • 200 g black beans canned; drained
  • 150 g cheddar cheese grated

Instructions

  1. Preheat your oven to 180°C/160°C(fan)/350°F/Gas 4.
  2. Spread 250 g Tortilla Chips chips over a baking tray and cover with 2 portion Salsa.
  3. Add 2 portion Slow cooker chicken fajitas (or choice of meat if using).
  4. Add the 200 g Black beans.
  5. Cover with 150 g Cheddar cheese.
  6. Bake into the oven for 10-12 minutes minutes, until the cheese has melted and the chicken has heated through.
  7. Top with sour cream, guacamole and jalapenos (all optional).

Notes

  • If no leftover chicken is available, rotisserie chicken or grilled shredded chicken can be used.
  • Ensure tortilla chips are in a single layer for even cooking.
  • Remove jalapeño seeds to reduce heat for milder nachos.
  • Cheddar or Monterey Jack cheese both melt well for topping.
