Loaded Chilaquiles

Loaded Chilaquiles feature tortilla chips tossed in warm enchilada sauce, topped with crumbled cotija cheese, sliced radishes and avocado, fried or poached eggs, lime wedges, cilantro, green onions, and crema. The mix of crunchy chips softened just enough by the sauce combined with fresh, creamy, and tangy toppings creates varied textures and bright flavors. This makes a flavorful breakfast or brunch dish that embraces layering and contrast.

Description

Starting with homemade tortilla chips as a base, the recipe calls for warming enchilada or salsa verde sauce to gently coat the chips without making them soggy. The skillet stage is brief to maintain some chip crispness before turning off the heat and arranging toppings. Crumbled cotija cheese adds salty tang and texture, while sliced radish and avocado bring freshness and creaminess. The eggs, either fried or poached, add richness and protein, making it more substantial.

Lime wedges and fresh cilantro contribute acidity and herbal brightness, balancing the richness of crema drizzled atop the dish. Green onions add mild sharpness and color. As a plate, loaded chilaquiles combine savory, spicy, creamy, and crisp elements that create interest in every bite.

The recipe note encourages customization by adding preferred toppings, making it flexible for personal taste or ingredient availability.
