Description

This Loaded Cornbread recipe starts by warming the oven to 425°F. Butter is placed in a cast iron skillet and melted to create a sizzling base that adds flavor and helps prevent sticking. Meanwhile, cornmeal, eggs, milk, oil, cheddar cheese, sugar, cooked crumbled bacon, creamed corn, and diced jalapenos are mixed thoroughly to form a thick, flavorful batter.

The hot skillet is removed from the oven and the batter poured evenly inside, or alternately poured into a greased baking pan. Baking for 25 to 30 minutes produces a golden crust with tender, moist interior.   • 3 cups cornmeal
  • 3 egg
  • 2 1/2 cups milk
  • 1/2 cup neutral cooking oil generic cooking oil
  • 1 1/2 cups cheddar cheese *shredded
  • 2 tablespoon sugar
  • 6 lices Bacon *cooked/crumbled
  • 1 can creamed corn I use the 8.25 oz can
  • 1 can jalapeno pepper 4 ounce can, diced

Instructions

  1. Preheat oven to 425 and place a few pads of butter around inside of cast iron skillet (If using a baking pan, simply grease pan).
  2. Place cast iron skillet into oven (if using), to melt the butter.
  3. Meanwhile, combine the cornmeal, eggs, milk, oil, cheese, sugar, bacon, corn, and jalapenos in medium bowl. Mix until combined.
  4. Once butter is melted in skillet and sizzling, remove from oven and pour batter evenly inside. If using baking pan, pour batter into pan.
  5. Place in oven and allow to cook for about 25-30 minutes.
  6. Remove from oven and allow to cool for 5 minutes before serving!
