Loaded Creamed Corn with Bacon

Loaded Creamed Corn with Bacon combines tender, slow-cooked corn with cream cheese and butter for a rich, smooth texture. The smoky crumble of bacon and fresh scallions adds crunch and savory contrast, enhancing the sweet corn flavor. This dish is ideal as a hearty side, ready from the crock pot after a few hours of gentle cooking, making it practical for meal prep or cozy dinners.

Description

Loaded Creamed Corn with Bacon features frozen corn slowly cooked with milk, butter, and cream cheese until creamy and soft. The gradual heat melds the dairy and corn together, producing a luscious base. Crisp bacon pieces scattered on top introduce a smoky edge, while scallions add fresh brightness to balance the richness. The combination of smooth, creamy corn and crunchy toppings creates a satisfying texture and flavor balance.

The cooking method relies on low, steady heat in a slow cooker, allowing the cream cheese and butter to melt thoroughly into the corn. This technique ensures a velvety consistency and infused flavors without risk of scorching. A final stir after cooking blends everything nicely before adding pepper for subtle spice.

This dish pairs well alongside roasted meats or grilled vegetables and brings a comforting, rich element to any meal. It is especially suitable for colder days when hearty, warming sides are welcome. The recipe is straightforward and requires minimal active preparation, making it accessible for home cooks of all levels.
