Loaded Mashed Potatoes

Loaded Mashed Potatoes combine creamy mashed baking potatoes with cream cheese, sour cream, milk, and butter for richness, seasoned lightly with garlic salt and nutmeg. Topped with shredded cheddar cheese and crispy bacon, then baked until melted and bubbly, they create a warm, indulgent side dish with savory, cheesy layers and a smooth texture.

Description

This recipe starts by boiling peeled and quartered large baking potatoes until tender, then partially mashing them. Softened cream cheese, sour cream, milk, softened butter, garlic salt, and nutmeg are beaten together with the potatoes to create a creamy, flavorful mash without overwhipping to maintain some body. Additional salt and pepper can be adjusted later depending on topping saltiness.

The mashed potatoes are transferred to a 9-by-13-inch baking dish sprayed with oil and topped generously with shredded sharp cheddar cheese and cooked, crumbled bacon. The covered dish bakes in a 350-degree oven for 30 minutes, then uncovered for an additional 10 minutes or until the cheese melts and bubbles. This baking step helps meld the flavors and create a lightly browned cheese topping.

Designed to serve about 12 people, this side dish offers a hearty, creamy texture with bursts of smoky bacon and sharp cheese, suitable for large gatherings or family meals. Optional green onion garnish adds a fresh note and color contrast at serving.
