  • 2 lbs russet potato diced into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 packet 1 oz ranch seasoning mix
  • 1 teaspoon garlic powder
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 1 ½ lbs boneless skinless chicken breasts, cut into 1-inch pieces
  • 1 cup cheddar cheese shredded
  • ½ cup mozzarella cheese
  • ½ cup Bacon crumbled, cooked
  • ½ cup sour cream optional, for serving
  • 2 green onions chopped (for garnish)

Instructions

Step No.1: Preheat Oven

  1. Preheat your oven to 400°F (200°C). Grease a 9x13-inch baking dish.

Step No.2: Season the Potatoes

  1. In a large bowl, toss diced potatoes with olive oil, ranch seasoning, garlic powder, black pepper, and salt.

Step No.3: Bake the Potatoes

  1. Spread the potatoes evenly in the greased baking dish. Bake for 25 minutes, stirring halfway through.

Step No.4: Add Chicken and Cheese

  1. Remove the dish from the oven and add the cubed chicken on top of the potatoes. Sprinkle with cheddar and mozzarella cheese.

Step No.5: Bake Until Done

  1. Return to the oven and bake for another 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.

Step No.6: Add Bacon and Serve

  1. Remove from the oven, sprinkle with crumbled bacon and green onions. Serve hot with sour cream on the side.
